Ever feel like you’ve had too many cups of coffee but still want to enjoy a coffee? Get your coffee fix via these light and fluffy, vanilla cupcakes with rich espresso frosting! I love finding new ways to enjoy coffee and nothing goes better with a cup of coffee than coffee flavored baked goods! I didn’t want to over-do it so rather than make coffee cupcakes, I made simple vanilla cupcakes with a rich and creamy coffee frosting.
Ingredients
Vanilla Cupcakes
- 2 Large Eggs at room temperature
- 2 Cups All Purpose Flour
- 1 Cup Sugar
- 2 Tsp Baking Powder
- 2 Tsp Vanilla Extract
- 1/2 Cup Unsalted Butter at room temperature
- 1/2 Cup Milk
- 1/2 Tsp Salt
Espresso Frosting
- 1 Cup Unsalted Butter at room temperature
- 2 Cups Powdered Sugar
- 1 Tsp Vanilla Extract
- 1 1/2 Tsp Espresso whatever kind you prefer
Instructions
Vanilla Cupcakes
- Preheat oven to 350 degrees and line muffin tin with paper liners.
- In a bowl, sift flour, baking powder and salt.
- Mix vanilla extract with milk.
- Cream butter and sugar together until fluffy.
- Add the eggs one at a time and each time combine some the dry ingredients.
- Fill baking tray. 3/4 of each liner will suffice.
- Bake for 20-25 minutes.
- Allow to cool fully on a wire rack before frosting.
Espresso Frosting
- Combine the espresso with vanilla extract until well mixed.
- Whip butter in a mixer or with a hand mixer.
- Add in powdered sugar.
- Add espresso-vanilla mixture.
- Decorate and enjoy!
Recipe Notes
By varying the amount of espresso in the frosting, you can make these as strong or as weak as you wish.
This frosting is creamy so perfect piping is difficult, refrigerate for a little while if you're feeling artistic!
