St. Patrick’s Day isĀ just around the corner this Irish girl couldn’t be more excited! Mostly because I get to make these delicious chocolate Guinness treats and have a valid reason for it!
Ireland is famous for many things and Guinness needs no introduction. So what’s more festive than Chocolate Guinness Cupcakes? Don’t panic though, these cupcakes are irresistible to even the non-Guinness drinker!
My good friend Rachel’s birthday happens to fall just days before St. Patrick’s Day and at one particular gathering she presented the most delectable, moist Chocolate Guinness Cupcakes. I had such great intentions to bake them myself but college and life got in the way. Months later, I found myself looking online for something similar but every recipe was too complicated. I am no magician in the kitchen. If it’s got more than ten steps, I’m out. Combining some recipes and from what I remembered of Rachel’s instructions I concocted the Frankenstein of recipes and ended up with this one.
- 6 oz Guinness Stout
- 3 oz Butter Melted
- 2 Eggs
- 1/2 cup Plain Yogurt
- 2 tsp Vanilla Extract
- 1 tsp Baking Soda
- 1 cup Sugar
- 1 1/4 cup All Purpose Flour
- 1/2 cup Cocoa Powder
- pinch Aof Cinnamon
- 8 oz Cream Cheese 1 Pack
- 2 oz Butter Room Temperature
- 1 tsp Vanilla Extract
- 3-4 cups Confectionerās Sugar
- Preheat oven to 350F/180C
- Line cupcake tin with cases and spray with non-stick cooking spray
- Whisk the eggs and yogurt together adding the Guinness and vanilla extract until well mixed
- In a separate bowl, sift all dry ingredients.
- Add dry mixture to wet mixture in a mixer until blended.
- Combine with melted butter.
- Scoop the batter into your tin (Donāt fill them all the way!)
- Bake for 20-25 minutes
- Cool on a wire tray
- Blend all wet ingredients and gradually combine with powdered sugar until smooth
A bottle of stout is preferable to a can and must be at room temperature when mixing!

I’ve made Guinness cupcakes once before (with Bailey’s Irish cream buttercream and a Jameson ganache) but I totally would’ve just preferred them with a regular frosting like this. The cake is so moist, it’s crazy! These look great.
